Ayan EC Vanilla – The Rare Tahitensis from Ecuador

While almost 98% of the world’s vanilla comes from the common Bourbon (planifolia) variety, there exists a far rarer type called Vanilla × tahitensis. Representing only a tiny fraction of global production, this variety is prized for its floral and fruity complexity and is most famously grown in Tahiti.

Ecuadorian Tahitensis, our Ayan EC, is a unique expression of this variety. Thanks to Ecuador’s fertile soils, tropical climate, and artisanal curing traditions, our beans develop an aroma that is distinct, rich, and layered.

Product Overview

INTRODUCING OUR EXQUISITE VANILLA

Product: Grade A Tahitian Vanilla Beans (Ecuadorian)
Origin: Ayan Farms-Santo Domingo - Ecuador
Bean Length: 15,5 - 18 cm
Weight per bean: 5-6 grams
Quantity: 1 bean per pack
Aroma & Flavor: Delicate Floral with Fruity Apricot and Nutty Notes

Farming Practices

At Ayan EC, our vanilla plants are young, and our plantation is currently producing its first harvest. They grow in 4,500 m² of fully enclosed greenhouses, which are hermetically controlled for temperature, humidity, and nutrients by our team of expert agronomists. These ecosystems are pest-free and perfectly optimized for vanilla growth. The soil in our Santo Domingo farms has been scientifically tested and proven to be virgin, nutrient-rich, and free from any contamination, creating the ideal environment for premium vanilla. From the very first day, every plant receives meticulous attention to guarantee the highest potential quality for each pod.

Duration: 1.7 years Cumulative Time from Planting: 0 – 1.7 years Key Standards: Hermetic environment, pest-free, constant temperature and humidity monitoring

Vanilla flowers are fragile and ephemeral, lasting only one day each year. Manual pollination is conducted daily by highly trained staff using toothpicks, ensuring that every flower reaches its full potential.

Vanilla Flower Stage 2

Duration: 0.5 years Cumulative Time from Planting: 1.7 years Key Standards: Manual pollination, controlled timing, individual attention to each flower.

After pollination, vanilla pods develop over approximately 9 months. Our team carefully monitors each plant, checking for pods with brown tips, signaling readiness for harvest. The greenhouse maintains strict, hermetically controlled temperature and humidity, ensuring healthy and uniform pod growth.

Pod Development Stage 3

Duration: 9 months Cumulative Time from Planting: 1.7 – 2.6 years Key Standards: Continuous monitoring, hermetic environment, optimal growth conditions

Pods are hand-harvested from the top of the inflorescence when they reach proper ripeness. They are collected in cloth bags and taken to the washing and trimming area. The “killing” process (thermal shock) activates enzymes that develop the characteristic vanilla aroma and flavor. Pods are then sweated for 48 hours to prepare them for curing.

Duration: 2–3 days Cumulative Time from Planting: 2.6 years Key Standards: Hand-harvested, controlled processing, enzyme activation

After sweating, pods are sun-exposed 1–2 hours daily at 60°C for 10–12 days. They are then moved to shade-drying rooms for 3–6 months, allowing slow, controlled dehydration. Following this, pods undergo an additional 5 months of careful curing, during which each pod is carefully massaged to enhance flavor and aroma. Weekly sun exposure ensures uniform quality. The curing rooms are hermetically controlled for temperature and humidity. Once the pods reach ideal flexibility and moisture, they are disinfected and vacuum-packed, preserving their organoleptic properties.

Curing Stage 5

Duration: 8–11 months total (including sun exposure, shade drying, and extra curing) Cumulative Time from Planting: 2.6 – 3.1 years Key Standards: Controlled temperature and humidity, hermetic environment, hand-massaged pods, long curing for maximum flavor

Our vanilla pods are 15–21 cm long, weigh 5–8 grams, and are rich in vanillin, the compound responsible for the iconic vanilla flavor. Ayan EC produces, curates, and exports directly, guaranteeing premium quality. These pods are ideal for vanilla caviar, ground vanilla, or extract, providing chefs with versatile and exceptional culinary value. Every pod embodies the pristine Santo Domingo soil, precise cultivation, and expert post-harvest process, making Ayan vanilla a rare and highly valuable product. Once packaged, the product is shipped to Europe via DHL, fully insured, ensuring it arrives safely and in perfect condition.

Final Product

Cumulative Time from Planting: 3.2 years Key Standards: Direct production, high-end quality, ready for international gourmet markets
