While almost 98% of the world’s vanilla comes from the common Bourbon (planifolia) variety, there exists a far rarer type called Vanilla × tahitensis. Representing only a tiny fraction of global production, this variety is prized for its floral and fruity complexity and is most famously grown in Tahiti.

Farming Practices
At Ayan EC, our vanilla plants are young, and our plantation is currently producing its first harvest. They grow in 4,500 m² of fully enclosed greenhouses, which are hermetically controlled for temperature, humidity, and nutrients by our team of expert agronomists. These ecosystems are pest-free and perfectly optimized for vanilla growth. The soil in our Santo Domingo farms has been scientifically tested and proven to be virgin, nutrient-rich, and free from any contamination, creating the ideal environment for premium vanilla. From the very first day, every plant receives meticulous attention to guarantee the highest potential quality for each pod.

Vanilla flowers are fragile and ephemeral, lasting only one day each year. Manual pollination is conducted daily by highly trained staff using toothpicks, ensuring that every flower reaches its full potential.

After pollination, vanilla pods develop over approximately 9 months. Our team carefully monitors each plant, checking for pods with brown tips, signaling readiness for harvest.
